We had our first family Christmas party today. I have been feeling so amazing since becoming Paleo that I have no intention of eating differently over Christmas. Don't get me wrong, I do occasionally let myself have non-Paleo foods, but they still have to be gluten free as I suspect gluten is a major irritant for me.
The first dish I wanted to make was a potato salad, which meant that I would need to try to make some homemade Paleo Mayonnaise, something I had been wanting to try for a while now. Mayonnaise is something I have really missed since becoming Paleo. I have been searching for a store-bought Mayo without vegetable oil but haven't found one yet so I knew I was going to have to make my own. Making mayonnaise can be a little tricky and my first batch failed miserably. It just never thickened up, the first recipe suggesting using a blend of coconut and olive oil, I put the coconut oil in first but I think I may have added it too quickly to start with. I searched for another recipe and found this awesome Paleo Mayonnaise recipe at Eat Drink Paleo. It worked like a charm, although it didn't have as much flavour as I would like so I added some extra salt, pepper, rosemary and another tablespoon of mustard - the result was delish!! The potato salad was a huge hit.
For dessert I made these fudgy paleo brownies from Trainer Luke. So easy and so yum. They take about 5 minutes (+ baking time) to make! I'll be making these all. the. time. Next time I'm going to add some Paleo chocolate sauce for total indulgence!
Christmas is nearly here.. I love this time of year once the shopping is out of the way and you can sit back, relax and enjoy spending time with the family. Will be sharing some cute pics of the munchkins in their Santa hats tomorrow..
