With all this cold, wet weather we have been having, I had a craving for some homemade pumpkin soup. Soups are popular in our family as my beautiful Oma makes positively the best soups I have ever tasted. I am always borrowing her soup recipes.
I make lots of variations of pumpkin soup depending on the ingredients I have on hand. Today I'm sharing my recipe for pumpkin & sweet potato soup.
1/2 a butternut pumpkin
1/2 a large sweet potato
2 spring onions
1 large clove of garlic
1 Massal chicken stock cube
1. Peel and chop all ingredients
2. Place in a saucepan and just cover with water
3. Bring to boil then simmer until all ingredients are soft
4. Blend & serve
5. Optional: Top with a dollop of cream and some fresh parsley
I always love to serve my soups with a side of jam crepes, the way my mother and grandmother have always served them. I know this is a little uncommon here in Australia but I believe it's the European way and I highly recommend giving it a try!
