Preheat oven to 180 C (350 F) - our oven is fan-forced, try 160 C (320 F) for a conventional oven.
1/2 cup of castor sugar
2 and 1/4 cups of self-raising flour
1/3 cup soft butter
3/4 cup milk
1 teaspoon vanilla essence
1 teaspoon ground cinnamon
1. Stew apples.
For those of you that haven't stewed apples before simply peel and slice apples (into thin slices). Place in a large saucepan with around 1/2 a cup of water. Boil until very soft checking on water level periodically to ensure it doesn't boil dry.
2. Mix all ingredients together
3. Add Apples and mix
4. Grease muffin tin (if necessary) and bake in muffin/cupcake tin for 25 minutes. Makes 12 medium sized muffins.
If you are serving the muffins warm, they do stick to the cupcake paper a little. Once they have cooled the paper will peel a lot easier (although they are delicious warm!).
