I'm a big fan of this Halloumi salad! It is a modified version of two different recipes, one recipe was my mother's, the other came from ABC Delicious Magazine (August 2004). For a recipe printable click here.
Butter lettuce or similar
Red capsicum sliced thinly
Carrots sliced thinly
1. In a large bowl place all salad ingredients. Sprinkle with shaved parmesan (I threw in the parmesan for a bit of added flavour - I like my cheeses - I loved it but you could easily leave it out)
2. In a small fry pan lightly fry Halloumi in olive oil until lightly browned then add Halloumi to salad.
3. Mix 4 tablespoons of olive oil and juice of half a lemon.
(Note: For the smaller sized salad in photo I halved the dressing amounts).
4. Drizzle dressing right before serving.
